Job Title: Utility Steward

Department: Culinary

Reports To: Equipment and Utility Manager

FLSA Status: Non-Exempt (Union)

Summary: To consistently exceed customer expectations by providing 'World Class" service through 100% effort, exceptional teamwork, and creativity.

Essential Duties and Responsibilities

  • Clean and sanitize all kitchen equipment

  • Clean and sanitize entire kitchen areas including storage areas, hallways and elevators

  • Clean and sanitize kitchen coolers and discard out dated items

  • Clean and sanitize kitchen restrooms and locker rooms as needed

  • Maintain garbage in ins and empty as needed

  • Store all equipment in proper storage areas

  • Assist Culinary with plating food for individual plated functions as needed

  • Assist Culinary staff with any immediate needs

  • Breakdown all food items from banquet functions and prepare soiled equipment to be washed

  • Fill out dish machine logs

  • Keep kitchens organized and put clean equipment away

  • Properly dispense, store and use chemicals

  • Clean and sanitize all small wares after banquet functions

For Plated Functions Utility Stewards shall:

  • Breakdown waiter trays as they are brought back
  • Silverware sorted, plates scraped and stacked, glassware on separate trays to separate breakdown areas.
  • Dump glasses and rack
  • Empty all water pitchers, goosenecks, coffee pots, etc. and return to rack.

  • Complete all other duties assigned

  • Must be able to work various shifts and hours to include holidays and weekends.

  • Must be able to lift minimum 25 pounds, carry_ pounds, push pounds
